Arugula is a perfect leafy green to add to your grocery list if your looking for ways to boost your green intake. Did you know that Arugula is not apart of the lettuce family, its actually apart of the cabbage family. With its peppery taste these leaves will surly add a great taste to your meals.
With summer on the way I like to keep my meals fresh and simple especially for lunch. I love leafs and normally have salads for lunch. A couple of years ago I was introduced to this peppery leaf and instantly fell in love. So customizable you can add it to almost anything. The first time I tasted was on pizza and it was absolutely delicious.
This recipe is super simple and tasty. I guarantee you’ll love it and make this quick salad once a week.
Ingredients
3-4 cups of of Arugula washed an dried
1/2 cups of Shaved parmesan cheese
2Tbsp of olive oil
2Tbsp of Fresh Lemon juice
1/2 Tsp of oregano
1/2 Tsp of Kosher Salt
1/2 Tsp freshly ground black pepper
Instructions
Place Arugula in a large bowl
In a separate bowl whisk together olive oil, lemon juice, honey, oregano, salt and pepper until combined.
pour dressing over Arugula and coat until evenly covered
sprinkle in Parmesan, mix for another 10 seconds and serve
